Brain food for the digital native

We are the first to put our hands up at S&S to say we drink way too much coffee and not enough water during a busy work day. A few sneaky snacks here and there and the odd “I just had the biggest day I’m getting ubereats” dinners, and before we know it, we’re in a food rut. Sound familiar? Add 8+ hours in front of blue light on a laptop screen and that’s a recipe for dull skin and poor gut health that no one asked for!

Enter recipe goddess and health food whisperer, Maddy Trueman. Mads understood the assignment when Elke came to her with a ‘how do I fix my lunch game?’ SOS call.

Problems: an afternoon slump in concentration, dull skin and a bit of gut discomfort that is so not cute.
The solution: Honey & Pistachio Crusted Salmon Super Bowl, made to nourish the mind and body of a digital native.

Honey & Pistachio Crusted Salmon Super Bowl

Ingredients:

2 small salmon fillets, skin on
1/2 cup pistachios, crushed or chopped roughly
2 tbsp extra virgin olive oil
2 large handfuls of mixed salad leaves
1 cucumber, chopped
2 radish, sliced finely
1 avocado, cubed
1/4 red onion, sliced finely herbs or micro herbs of your choice

Honey Dressing

Juice of one lemon
2 tbsp extra virgin olive oil
1 tbsp honey
2 tsp dijon mustard
pinch salt and pepper

Method:

1. Preheat oven to 180 degrees fan forced. Line a baking tray and add salmon fillets, skin side down.

2. In a small bowl whisk together all honey dressing ingredients. Reserve 2 tbsp in a seperate bowl. Brush salmon using reserved dressing.

3. Add pistachios and olive oil to a small bowl. Mix together then press firmly into the salmon. Bake for 12-15 minutes or until cooked through.

4. Arrange salad leaves, cucumber, radish, avocado, red onion and herbs in two bowls. Top with baked salmon and sprinkle with salt and pepper. Drizzle with honey dressing and serve. Enjoy!
